Wood, Gas, or Electric: Which Smoking Cabinet is Right?

Smoking cabinets can be operated in various ways: with wood, with gas, or electrically.

• Wood: The wood is placed in the embers drawer of the Smoking Ovens and through its combustion, fish or meat is cooked in the cabinet. After cooking, wood chips provide a special aroma.

• Gas: The oven is heated with gas from a connected propane gas bottle, and the contents are cooked. For the smoke, a burner bowl with wood chips is then used.

• Electric: The cooking and smoking process in the electric smoking cabinet is similar to that of the gas heating.

For cold smoking, especially ham, salami, bacon, salmon, and mountain cheese are suitable, while trout, eel, poultry, and vegetables are hot smoked. Which Wood Should Be Used in the Smoking Cabinet?

When heating with wood, dry beech, birch, or alder wood is usually used. For wood chips, beech wood is particularly appreciated by connoisseurs as it gives fish and meat a spicy, balanced flavor. The mild aroma harmonizes excellently with fish.

The Small Alternative: The Tabletop Smoking Oven

A large smoking cabinet requires a lot of space. Anyone who has only a small property, a terrace, or a balcony is well-advised with a tabletop smoking oven. The small oven is easy to use and transport. Quickly set up, it becomes the highlight at dinner on the table or can also be taken on fishing trips or camping excursions. Even if you only occasionally smoke small portions, the tabletop smoking oven is a good alternative to the massive smoking cabinet.

Smoking cabinets must withstand high temperatures. Therefore, they should be made of robust materials such as thick stainless steel.
