The Acidometer VINOFERM Complete set is the perfect tool for quickly measuring the acidity of red and white wine in just three easy steps. Simply measure the wine, add the blue liquor, and read the acidity directly! This comprehensive kit includes a special measuring cylinder, a bottle of Vinoferm® blue liquor, and litmus paper. The kit comes with easy-to-follow instructions, making it incredibly simple to use. Not only is it ideal for measuring acidity, but it can also be used for the determination of free sulfite, using an iodine solution (013.056.7).

What is pH?

  • The pH value is the concentration of free hydrogen ions in a liquid.
  • The pH of pure water is 7.
  • Liquids that have a greater concentration of hydrogen ions than pure water are acidic and have a pH of less than 7.
  • Liquids with a lower concentration of hydrogen ions are alkaline and have a pH value above 7.
  • The pH scale ranges from 1 to 14.

Can you measure the pH value instead of the acidity of your must? The answer is no! Acidity in winemaking is the number of grams of acid in your wine/juice, usually expressed in grams of tartaric acid per liter. This can only be accurately measured with blue liquor. However, you can use a pH meter in combination with blue liquor to get a more accurate reading. Instead of adding blue liquor until the color changes to blue, add blue liquor up to a pH value of 7.00. This method is much more accurate and easier to read for red juices, among other things. The combination of pH meter - blue liquor and automatic burette is a professional setup for accurately measuring the acidity level.
